Consultant for the Wine Department
Jean-Michel Deluc began his career learning front-of house restaurant service at the hotel school in Toulouse and working as an apprentice in the Pujol restaurant dining room.
Once qualified, he left for England and carried out a number of enriching roles in a variety of establishments such as the Café Royal in London where he worked as a sommelier until 1979. In 1978 he obtained the sommelier’s diploma from the sommeliers association of Great Britain, then the Wine and Spirit Trust certificate in 1979 whilst continuing to improve his linguistic skills.
He returned to France in 1981, and continued his career as a sommelier at the famous Fouquet’s in Paris, before becoming assistant head sommelier at the Ritz Hotel in Paris for two years: from 1983 to 1985. Mr Deluc then became manager and sommelier of the Bar de l’X in Paris. In 1987 he moved on and became head sommelier at the Drouant restaurant. From 1990 to 1992 he became head sommelier at the Espadon, and then the same position at the Ritz from 1992 to 1997.
Mr Deluc is a professional trainer, Master of internships for the national education system and also gives conferences, contributes to a number of web sites and is a researcher and writer for culinary guides. He has written several books: Guide des vins bios (Hachette), Le Livre de Cave de Jean-Michel Deluc (First) and Guide des BIB (First). He has also participated in the edition of a number of books: le Grand Larousse du vin (Larousse), Le Vin essence de vie (DIE) et Guide vins Bios (Marabout).
Mr Deluc is an active member of numerous wine associations: secretary general of the Association de la Sommellerie Internationale from 1990 to 1996; secretary, vice-chairman and chairman of the Sommellerie Parisienne from 1981 to 1996, and secretary of the Sommellerie Nationale from 1990 to 1996. He participates regularly in wine challenges as a jury member, particularly for the Trophées Ruinart and the Meilleur Sommelier de France, Europe and World competitions.
Jean-Michel Deluc joined Le Cordon Bleu team as a consultant in 2000.
