              50 hours of specialization in French Wines and Spirit at Le Cordon Bleu Paris institute

              A 2-week accelerated Wine and Spirit training programme culminating in a certificate.

              Presentation of Le Cordon Bleu Paris wine Initiation

              This intensive programme is suited to all those who want to further their knowledge in the field of wine. This intensive class, dedicated to wine and spirit, is ideal for wine lovers, with or without previous knowledge, Culinary Arts students and those working in the hospitality/restaurant field.

              The consultants share their techniques and expertise with all the participants, so that each and every one of them is able to understand the world of wine, via numerous tastings.

              Classes take place at Le Cordon Bleu Paris institute, in a cellar-style tasting room, dedicated to wine, which has been equipped in partnership with Riedel Crystal glassware.

              Each participant receives course materials covering all the themes studied during the training programme.

              Classes are taught in French and translated into English by a professional who is specialized in wine and spirits.

              • Wine and Spirit intensive class training programme content
                • Introduction to wine tasting
                • Red, rosé and white vinification and special vinifications
                • Studying the main French viticultural regions, including tasting a selection of wines which are representative of the vineyard studied: Burgundy, Languedoc-Roussillon, Alsace and the Jura, Champagne, Bordeaux, the Loire and the Rhone Valley
                • Cuisine demonstration by a Le Cordon Bleu Chef with food and wine pairings
                • An introduction to organic, biodynamic and natural wines
              • Wine and Spirit intensive class objectives
                • To understand how different wines are made by studying oenology, and tasting numerous wines which enable the processes studied to be clearly illustrated.
                • To learn tasting techniques and how to pair food and wine by watching a joint demonstration by a Le Cordon Bleu Paris institute cuisine Chef and a Sommelier.
                • To examine cutting-edge issues: the link between the old and new worlds through different styles of wine: a Master Class in partnership with Riedel Crystal glassware, special vinifications, Cognac and new trends in winegrowing production.

                Our teachers are all experts who are widely recognized in the field of wine, having worked in large companies and been in direct contact with winegrowers.
                Franck Ramage, Wine Department Manager at Le Cordon Bleu Paris institute, selects the wines which are tasted during the various classes.
              • Certificate
                At the end of the Wine and Spirit training programme, all those who have participated will take a written examination and carry out a blind tasting in order to assess what they have learnt. They will then be presented with a Le Cordon Bleu certificate.
