As part of our Gourmet Masterclass Series by Friends of Le Cordon Bleu London, Chef Salina Campbell, founder and owner of Joli, one of Borough Market's most popular food stalls, has designed a unique hands-on culinary workshop celebrating the rich flavours and traditions of Malaysian and Singaporean cuisine.

Drawing on her expertise and heritage, Chef Salina will introduce participants to the art of making one of Southeast Asia's most iconic dishes—Singapore Chilli Crab. Participants will gain practical knowledge of balancing sweet, savoury and spicy flavours, as well as mastering the preparation and cooking methods that make this dish so distinctive.

During the workshop, participants will:

  • Prepare and cook an authentic Singapore Chilli Crab from scratch
  • Understand the key ingredients, spices and flavour profiles used in Malaysian and Singaporean cooking
  • Master traditional southeast Asian braising techniques for maximum flavour and texture
  • Balance sheet, spicy and savoury elements to create a rich, authentic chilli crab sauce
  • Learn practical tips for selecting, preparing and cooking fresh crab
  • Plate and serve the dish with traditional accompaniments
Chef Salina will demonstrate the following recipes:
  • Traditional Singapore Chilli Crab
  • Homemade Chilli Crab Sauce

Alumna Salina Khairunnisa Campbell graduated from Le Cordon Bleu London with a Diplôme de Cuisine in 2020. Salina is the founder of Joli, a Malaysian and Singaporean inspired food brand based in London.

Salina trades at Borough Market, where she sells her handcrafted chilli sauces and jarred products, as well as her signature beef rendang and a whole range of other Malaysian-Singaporean culinary delights - from fragrant curries and sambal to classic street food favourites.
