Whether it's breakfast, brunch or afternoon tea, freshly baked pastries are always a welcome treat. This six-hour cookery course offered by our bakery school in London will uncover the secret to making perfect pastries.
Our Master Baker will impart his knowledge on how to mix, knead and roll the perfect enriched dough. Brioche and bun doughs are examples of enriched doughs where the butter is blended into the dough when mixing. Within this class making enriched dough, several different products will be produced each with its own unique taste and design, including brioche a tete, chocolate brioche, praline brioche loaf, laminated brioche loaves; accordion shape, cinnamon buns and apple buns.
All of the breakfast pastries created during the day are yours to take home with you. No prior knowledge is required for this course and it is suitable for both novices and cooks with some experience.
By the end of this lesson students will be able to:
- Understand and apply the 12 steps of baking to an enriched dough
- Understand how the addition of enriching ingredients (Milk, butter, eggs) affects the dough
- Mix an enriched bread dough
- Laminate dry butter into a yeasted enriched dough
- Shape brioche dough into three different classic shapes
- Shape, prove and bake a variety of rich yeasted doughs
- Shape a bun dough into two different classic shapes
- Prepare a craquelin topping to use on baked products
