With our Taste of Le Cordon Bleu Pâtisserie course, you'll gain an insight into the experiences shared by our students at the world’s premier culinary arts school in London. Observe and engage in the learning environment and teaching methods applied throughout our culinary programmes by participating in a pastry workshop under the guidance of our Master Pâtissier.
Taste of Le Cordon Bleu aims to provide prospective pastry and baking students with an understanding of the school’s teaching methodology prior to making their choice of programme.
Content of our Taste of Le Cordon Bleu Pâtisserie course:
- Sweetened, flavoured cream
Prepare Chantilly cream - Sugar syrup
Produce a flavoured simple syrup - Glacage
Prepare and apply a strawberry set glaze - Chocolate work
Prepare a tempered white chocolate plaque for the top of the Fraisier - Whisked sponge
Prepare a Génoise sponge - Classical preparations
Crème pâtissière and conversion to crème mousseline - Chocolate work
Create a chocolate and strawberry glaze - Knife skills
Strawberry preparation - Cake assembly
Assemble prepared elements into a Fraisier
Whilst no prior knowledge is required for this course, it is recommended for those with an ambition to seek further professional development in the culinary arts and dedicated amateur cooks.
Class structure
Your day will be a mixture of in-kitchen demonstrations performed by the chef who is running the session and hands-on practical cookery, where you are guided by the expert teaching chef. The exact format will vary from class to class depending on the style of cuisine and length of the course.

What you need to bring:
- Sensible, flat-soled shoes. Open toes are not advised
