Meet Fabrice Monperrus
Cuisine Chef

 

With experience in Michelin-starred kitchens since graduating from college, Chef Fabrice has cooked for world leaders at Royal ceremonies before teaching future generations.

Chef Fabrice joined Le Cordon Bleu London as Cuisine Teaching Chef in 2023.

Paris-born Chef Fabrice Monperrus grew up in the French Alps and inherited a passion for cooking from an early age. Inspired by his mother who would cater for schools and large institutions, he realised it was his calling to become a Chef after he was awarded a scholarship at the Francois Rabelais College, Lyon, at the age of 16. After graduating, he landed his first full-time role as Junior Chef at the Michelin-starred, Llangoed Hall Hotel restaurant in Brecon, Wales.

Following his experience in Wales, Chef Fabrice became Chef de Partie at three-rosettes Ivy restaurant in Covent Garden, London, and catered for over 500 covers a day. He also honed his culinary skills at the exclusive, private-members luxury casino, Les Ambassadeurs in Mayfair, London, where he expanded his knowledge on different cuisines through catering for a breadth of international guests.

His wealth of knowledge brought him to his next venture at the House of Lords, Palace of Westminster, London, where he spent ten years as Sous Chef and eventually acting Head Chef of the palace’s outlets. He catered for several politicians and world leaders, including former President Mikhail Gorbachev of the Soviet Union and the royal family. In 2003, he led a reception of over 200 guests for the 50th anniversary of Queen Elizabeth’s Coronation in the Royal Gallery, Palace of Westminster. In 2015, Chef Fabrice became Head Chef of the British Museum, London.

After years of working in professional kitchens, Chef Fabrice realised his desire to pass on the legacy his teachers gave to him. He had the opportunity to become a culinary lecturer at Bath College which cemented his passion to teach. He taught for another five years before continuing his journey as a Hospitality and Culinary Arts lecturer at Waltham Forest College in London.
