Guest Chef Demonstration with Chef Nicolas Guercio

Le Cordon Bleu London are delighted to welcome Chef Nicolas Guercio for a pâtisserie demonstration in which he will showcase some of the skills which have earned him the position of executive pastry chef at LUTETIA palace hotel in Paris.

Chef Nicolas has a wealth of experience in fine-dining restaurants and 5* hotels including the Ritz Paris, Aubaine, Hakkasan, and even as pastry chef instructor at Ferrandi.

He is now the executive pastry chef of the LUTETIA palace in Paris since 2019 and was one of the 12 finalists of the MOF competition this year.

 

Nicolas Guercio

Nicolas Guercio began his culinary career in 1999 and then pursued a pastry career in 2002 at the Hôtel Royal Monceau, followed by the Ritz Paris, where he learned how to create stunning desserts for luxury hotels with Eddy Benghanem. Once he reached the chef de partie position, he moved to London for an international experience. He joined the teams at the Aubaine restaurant, and later at Hakkasan, renowned for its Michelin-starred Asian-inspired establishments across the UK.

Nicolas Guercio returned to France in 2007, joining Dalloyau as the head of production and quality for their boutiques in France and Japan. From 2008 to 2014, he moved to Russia in Saint-Petersburg as pastry chef for various renowned restaurants and hospitality groups. He is now the executive pastry chef of the LUTETIA palace in Paris since 2019 and was one of the 12 finalists of the MOF competition this year.
