Join Le Cordon Bleu London for a special guest demonstration with Manuel Lucas López of Le Cordon Bleu Madrid on 9th June 2026.

Le Cordon Bleu is delighted to host a very special guest demonstration on Spanish Cuisine with Chef Profesor de Cocina Manuel Lucas López of Le Cordon Bleu Madrid.  

Highlighting the teachings of the Spanish Cuisine Diploma available at Le Cordon Bleu Madrid, this demonstration will showcase two incredible dishes:

  • Fried-Bread Foam Stuffed with Oxtail Stew & Traditional Brava Sauce
  • Rice with Squid, Marine Plankton & Fennel

Please note, this will be taught in Spanish and translated to English live in the session.

 

About Manuel Lucas López
Manuel Lucas López was born and raised in Madrid, holds a degree in Labour Relations. He began his culinary career as a chef at the Michelin-starred local restaurant, El Drago. A year later, he joined the team at the two-Michelin-starred La Broche, where he continued to advance professionally. This experience was followed by a stint at Sant Celoni, marking the beginning of a highly enriching stage in his career.

During this time, he served as head chef at some of the country's most prestigious establishments, including Martín Berasategui, Concilio, Arola, La Broche, Sergi Arola Catering, and Silk & Soda.

In 2014, he launched his own project, Taberna Cocinarte, where he developed a more personal culinary style. Following this successful venture, which concluded in 2020, he became the executive chef for the restaurants Blue Moon and La Sagrada Fábrica. Concurrently, he served as head chef for the NGO Cesal.

Driven by a new professional interest in early 2022, he joined KitchenClub and Electrolux as a culinary trainer. Deciding to focus entirely on culinary education, he joined the prestigious Le Cordon Bleu Madrid a few months later, where he currently serves as a Chef Instructor for the Spanish Cuisine programmes.
