This class is part of our series of Cordon Vert® short courses, which have been designed to teach you how to create beautiful plant-based cuisine. Explore the wealth of delicious ingredients the plant world has to offer and learn the skills to prepare excellent plant-based dishes with Cordon Vert®.

During this 1-day course you will learn to make macarons which are naturally gluten free and made using plant-based ingredients. You will also learn to personalise and package your macarons for an artisanal touch.

By the end of this lesson students will be able to:

  • Prepare Italian meringue using plant-based ingredients 
  • Prepare plant-based Italian meringue macaron shells 
  • Prepare and use a plant-based bitter chocolate ganache 
  • Prepare fruit gel   
  • Prepare, shape and bake Macaron de Nancy
  • Apply piped chocolate decorations
