Cordon Vert®: The Art of Fermentation

Covering a wide range of techniques, this 2-day course introduces you to the art of fermentation. Our master Chefs will teach you how to ferment various fruits and vegetables, and you will also learn the craft of making plant-based ‘cheezes’, exclusively made from plant proteins.

This class is part of our series of Cordon Vert® short courses, which have been designed to teach you how to create beautiful plant based cuisine. Explore the wealth of delicious ingredients the plant world has to offer and learn the skills to prepare excellent plant-based dishes with Cordon Vert®.

This 2-day class will teach you the following recipes and techniques:

Day One

  • Principle of fermentation introduction, Ferment % ratio, times and temperature 
  • Fermented fruits – Blueberry. Gooseberry 
  • Fruit cheong 
  • Fermented baby onions 
  • Fermented baby cucumbers with dried dill
  • Beetroot and strawberry  
  • Kvass demonstration and tasting 
  • Red sauerkraut 
  • Soaking of almond 
  • Soaking of cashew 
  • Soaking of nappa cabbage 

Day Two

  • Plant based milks
  • Almond ricotta
  • Baked almond cheeze
  • Cashew cheeze
  • Kimchi 
  • Soda and ginger bug starters 
  • Honey & garlic fermentation 

By the end of this lesson students will be able to:

  • Understand batch and anaerobic fermentation and the principal techniques of making fermented food
  • Understand traditional and modern techniques in the use of ferment process 
  • Understand back slop method using old ferments as a starter for new products
  • Understand continuous fermentation with starter bugs and sourdough mother.
  • Understand state fermentation with the making of plant based cheezes 
  • Understand lactic fermentation using Anaerobic technique 
  • Understand Ethyl alcohol fermentation
