Wine and Gastronomy (Term 1) is the first step toward completing the Diploma in Wine, Gastronomy and Management.

The 3-month course is designed to give you a strong foundation on which to build your wine and gastronomy skills and knowledge. Wine and Gastronomy (Term 1) includes modules such as wine sensory analysis, wine production, food and wine matching or hospitality and events.

During this term, you will taste a large selection of wine and beverages at trade tasting and wine events as well as visit wineries, breweries, distilleries and restaurants all based in the UK.

Wine and Gastronomy (Term 1) can be followed by Wine and Management (Term 2).

Entry requirements: high school diploma or equivalent, evidence of English language. No prior experience is required. All students must be aged 18 years or over.

Wine and Gastronomy Course Details

Course Structure
- Wine sensory analysis: develop a methodical sensory evaluation technique whilst learning the fine art of describing wine in a precise manner by incorporating appearance, nose and palate.
- Wine production: explains viticulture, winemaking, maturation and bottling, in the context of climate, geography and topography. You will visit British wineries in different seasons.
- Wine producing countries and regions: learn about the specificities of the different wine producing countries. The first term will focus on France, Italy and sparkling wines. The course will be supported by in-house tastings and professional fairs.
- Alcoholic and non-alcoholic beverages: develop a structured method to assess all drinks with the same efficiency as applied to wine. Topics include methods of production, origin and taste of fermented drinks, spirits and other beverages; relevance of proposing alternative drinks etc.
- Food and wine matching: develop a theoretical and practical understanding of the interaction between food and wine from a global perspective. This unit includes educational lunches in restaurants.
- Hospitality and events: this unit focuses on wine service, covering different styles of service and highlighting the techniques required to optimise the flavour of a wine.
- Professional development: enhance learning, study and communication skills to facilitate the student integration into the wine and beverage trade
- Field visits: during the term, students will visit different wineries, breweries, distilleries and restaurants in the UK, and participate in various trade tastings and wine events.
