Guest Chef Demonstration with Tom Anglesea

We were joined by Tom Anglesea, Head Chef of The Laughing Heart restaurant in London's Hackney. Known for creating unfussy yet accomplished contemporary small plates which are inspired by his travels to far flung regions around the world, Tom emphasises seasonality in all of his cooking. Placing solid supplier relationships at the heart of his cooking, Tom uses only the best 'hyper-seasonal' produce available, combining local ingredients with the techniques and flavours he found during his travels. With industry experience since the age of 16, Tom has worked in big name restaurants around the world, including Thomas Keller's 3 Michelin-starred New York restaurant Per Se, Neil Perry's acclaimed Rockpool in Sydney, Wiltshire's The Red Lion Freehouse and London's award winning Chiltern Firehouse.
