Guest Chef Demonstration with Johanna Le Pape

 

    Award winning pastry chef and consultant Johanna Le Pape paid a visit to Le Cordon Bleu London to demonstrate some of her unique sweet creations. Johanna specialises in lighter, healthier gourmet pastries, using quality ingredients to create decadent dishes which are also nutritious.

    Chef Johanna demonstrated three pastries, starting with a coffee Eclat. She constructed the dish creating textured layers with flavours of coffee, chocolate and vanilla. The elements of the dish were made using quality ingredients including Belgian chocolate, chestnut flour, almond paste and argan oil, forming an indulgently nutritious dessert.
    For her next demonstration, Johanna made two chilled, no-bake desserts. The first consisting of a coffee ganache, made using cream, coffee, chocolate and gelatine. The second was an autumnal combination of almond milk, dark chocolate, pumpkin, honey dates and cinnamon.

    Johanna Le Pape is a pastry chef whose focus is on wellness, believing that gluttony can rub shoulders with beauty and health. Johanna's career took off in 2014, after winning the Sweet Arts World Cup with the theme "Notre-Dame de Paris" alongside her partner, Gaetan Fiard. She went on to become a teaching Chef at the Alain Ducasse culinary school, and in 2015 was responsible for the creation of the entire collection for "Les Marquis de Ladurée". Johanna now works as a consultant, putting her expertise at the service of creation and professional training. She assists agri-food start-ups in their food innovation and explores ways to make her creations healthier and more sustainable.
