Le Cordon Bleu London were delighted to be joined for a special online Guest Chef Event featuring Emily Roux, Director of Caractère.

The youngest of the Roux family dynasty, Emily Roux began her training in 2010 working in the kitchens of the Michelin starred La Table du Lancaster* in Paris, before spending time at Alain Ducasse’s Monaco restaurants, La Trattoria and Le Louis XV***, and Paris' Le 395* and Akrame**. Moving back to London she worked with Restaurant Associates and with her father at Le Gavroche on a series of monthly events they launched together in 2016.

It was in October 2018 that Emily opened her first restaurant with husband, Diego Ferrari, Caractère. Based in Notting Hill, the restaurant encompasses what both Emily and Diego hold dearest – beautiful food, warm surroundings, expert and friendly service – all delivered with real character.

For this demonstration, Chef Emily prepared two dishes from the menu at Caractère - an acquerello risotto with a port reduction, black crumble and hazelnut praline and a molten chocolate tart with a pecan praline and salted caramel.

Throughout the event, Chef Emily took questions from the audience on a range of topics including what inspires her menu at Caractère, how she chooses her ingredients and what it's like to come from such a renowned culinary background.
