In this Viennoiserie course(2 days), Le Cordon Bleu proposes to share with you all the secrets to understand the basic techniques of making croissant, brioche and other types of artisanal pastries. In this two-day course you will learn the process step by step, kneading, lamination, fermentation, cooking, applications and finishes, fillings and conservation.
