Explore Italian cuisine in this 6-hour class focussed on classic Primi Piatti dishes: Agnolotti, Gnocchi and Orecchiette.
In this one-day class, you will learn how to make a few dishes which regularly feature as the first course on menus across Italy. Techniques taught include creating fresh pasta doughs, a braised beef filling, potato gnocchi, shaping and cooking pasta, as well as the accompanying sauces and jus.
In this class, you will make:
- Agnolotti del Plin al Sugo di Brasato – Braised beef agnolotti, parmesan butter sauce and Barbera wine jus
- Gnocchi alla Sorrentina – Potato gnocchi with tomato, mozzarella and basil
- Orecchiette con le cime di rapa – Orecchiette pasta with rapini, anchovies and chilli sauce
Everything you make is yours to enjoy on the day or take away with you. No prior knowledge is required for this course and it is suitable for both novices and cooks with some experience.
Class structure
Your day will be a mixture of in-kitchen demonstrations performed by the chef who is running the session and hands-on practical cookery, where you are guided by the expert teaching chef. The exact format will vary from class to class depending on the style of cuisine and length of the course.
