Intermediate Cuisine Certificate

Intermediate Cuisine Certificate imparts an in-dept study of French regional cuisines and related subjects through which students will apply the techniques introduced in the Intermediate certificate programme. Here the emphasis is on understanding, organisation, production and presentation, at the same time master knowledge on ingredients, classifications and origins of the regions including seasonings and flavour appreciation with techniques in butchery.

 
Emphasis is placed on the importance of:

4 intakes each year: January, April, July or October

    • Implement all the basic techniques learned and apply them to fundamental European regional cuisine and culinary techniques inlcuding:
      • developing specific knife skills
      • preparing live shellfish
      • methods of preserving
      • developing butchery skills and fish filleting
      • compile classic and modern plating presentations
      • sweet and savoury hot souffle
      • developing sauce knowledge
      • practising cooking methods
      • identifying specific European techniques and cuisine
    • Follow health, safety and hygiene regulations
    • Experience food and wine pairing
    • Study cheese production knowledge
    • Extrapolate personal kitchen organisation and management skills
  • WHO IS THIS PROGRAMME FOR?

    This programme is primarily for individuals ultimately wishing to become high end professional chefs or restaurateurs and who wish to develop advanced culinary skills by studying with a renowned culinary training organization.

    It is not necessary to have prior culinary training or experience to join the programme, but the passion and commitment to learn from expert international chef instructors and to create the finest dining experiences are essential.
