Prestige Macarons are delicate French confections characterized by their crisp shells and flavorful ganache fillings. This workshop guides students through the detailed process of making classic white macaron shells using Italian meringue technique, followed by creating and assembling several signature ganache fillings — including Mogador, Intense Vanilla, Pistachio, Salted Caramel, and Black Truffle.

Student will learn with 5 flavors:

  • Black Truffle Macaron
  • Sicilian Pistachio Macaron
  • Salted Butter Caramel Macaron
  • Mogador Macaron (Jivara 40% Chocolate & Passion Fruit)
  • Intense Tahitensis Vanilla Macaron

 

Key Student Steps

  • Prepare white macaron shell mixture by blending almond powder and egg white.
  • Make Italian meringue by cooking sugar syrup and whipping with egg whites.
  • Macaronner (fold) the meringue into the almond mixture until smooth.
  • Pipe macaron shells (3-4 cm diameter) and dry until a skin forms.
  • Baking understanding
  • Prepare various ganaches and fillings (Mogador, Vanilla, Pistachio, Salted Caramel, Black Truffle).
  • Pipe fillings onto one shell
  • Decorate shells using appropriate colors and powders per macaron flavor.

  • Put it all together and decorate your macarons like a pro

    - A 6-hour practical session (not inclusive of a 1-hour lunch break), all ingredients, a recipe folder with notepad and pencil, apron and hat.

Remarks:
    - Participants should be at least 17 years old at time of application.
    - No prior knowledge is required for this course and is suitable for novices, cooks with some experience, dedicated amateur cooks and those seeking to further their culinary skills. All of the food created during the session are yours to take home with you.
