About Florence Lesage
Originally from northern France’s Picardy region, Florence Lesage dreamed of working with chocolate since she was a child. After obtaining several diplomas in patisserie, she rounded out her training by participating in the regional Olympiades des Métiers competition in 2014. After becoming world vice-champion in 2015 in patisserie-confectionery at the WorldSkills competition, Florence Lesage then decided to perfect her skills by obtaining her Master Craftsman’s diploma. Following an experience as Chef de Partie at Château de Montvillargenne in Gouvieux (northern France), she continued in the same position at The Westin Hotel Paris-Vendôme, under Chef David Réal. She was promoted to Pastry Chef in 2018, and became the manager of a team of 8. In April 2022, she decided to devote herself entirely to preparing for the international finals of the Mondial des Arts Sucrés pastry competition which she and Alexis Beaufils won as a team last October. Today, with her title as World Champion of Confectionery Arts under her belt, she still has many dreams that she would like to pursue, and is especially enthused about passing on all that she has learned.
