Recipe OverviewThe tourtière is an iconic Quebec dish, traditionally a savory meat pie. This 100% Plant-Based version allows you to explore how classic Quebecois techniques—handcrafted puff pastry, precise vegetable cutting, and controlled cooking times—can be adapted to modern, responsible cuisine.Learning ObjectivesThrough this recipe, you will develop the following skills:
- Mastery of puff pastry: Folding (Tourage), resting, and rolling techniques.
- Cutting techniques: Macedoine (small dice), fine slicing, and rough chopping.
- Cooking management: Pre-cooking vegetables, glazing, and oven timing.
- Adapting traditional recipes to Plant-Based alternatives.
