On December 10, current students and alumni of Le Cordon Bleu Madrid participated in a masterclass centred on festive birds, presented by Higinio Gómez.
Higinio Gómez, who has operated the renowned poultry shop Hermanos Gómez Ortiz in the Vallehermoso market in Madrid since the 1970s, presented an engaging session that revealed the secrets of the most popular birds for this festive season.
During the masterclass, Higinio guided attendees through an in-depth exploration of ‘festive birds’ that attendees could see live, such as corn quails, pigeons, pulardas, capons, free-range chickens, etc., and explained the best way to prepare them to get the most out of them in Christmas recipes.
This engaging masterclass wrapped up the 2025 FueraDeCarta Masterclass series. The new calendar for supplementary classes and training activities for the Institute’s community will be released soon.
