Masafumi Karaki owns the acclaimed Mumyo restaurant in Chino City. For this event, Chef Karaki shared the food culture of Nagano Prefecture, where his restaurant is located. Mumyo focusses on using the best seasonal produce available in the region, and for this event Chef Karaki demonstrated two plant-based dishes which pair perfectly with Miyasaka Brewing’s Masumi sakes and offer insight into the food he prepares at his restaurant.
Founded in 1662 in the Japan Alps of Nagano Prefecture, Masumi owes its quality to the region’s cold climate and pure water. Named for “The Mirror of Truth,” a national treasure at the nearby Suwa Taisha Shrine, Masumi is famous as the birthplace of the No. 7 Yeast, which it uses to produce food-friendly sakes with exceptional balance. Hugo Chan of Miyasaka Brewing provided insight into their sakes, and guests were treated to an early taste of the Hiyaoroshi sake which is only released for autumn.
