Michael Kwan is Executive Pastry Chef at The Dorchester, London's iconic landmark hotel where he leads the pastry team, overseeing the signature afternoon tea at The Promenade, Cakes and Flowers Shop, Par Café, and all luxury rooms. His artisanship extends to creating exquisite pastries and desserts for weddings, parties, and events throughout the property.
During the demonstration, Chef Michael recreated a fig & raspberry tart from the Autumn Winter menu at the hotel. Chef Michael was assisted at the demonstration by Winsome Cheng, who completed the Diplôme de Pâtisserie with Internship Pathway at Le Cordon Bleu London and now works in the pastry department at The Dorchester following a successful internship placement. Attendees at the demonstration each enjoyed a taste of this delicious pastry treat.
