Why Wine Studies Course at Le Cordon Bleu Dusit?

Le Cordon Bleu Dusit, with more than 5 years, has opened "Wine Studies Course" which has been conducted by Le Cordon Bleu Dusit Academic Manager, Christophe Mercier from France, an expert in matters of taste who is a highly skilled and experienced Food and Beverage Professional and former sommelier as he has been joining Le Cordon Bleu Dusit to conceptualize and deliver academic course and workshops in food and beverage management and wine studies.

Born in France-Comté, Christophe Mercier began his career in 1986 after obtaining his "Brevet d'Etudes Professionalles BEP)", and worked his way up through different positions from Waiter to Bartender, Sommelier, Maître d'Hotel and Food and Beverage Manager in one to three Michelin Starred Restaurants, Relais & Châteaux and aboard Cruise Ships in France, England, Bermuda, Canada, USA and the Caribbean.

In 1996 he earned a BSc in Human Resources Management and oriented his career in Training and Education with the French National Association for Training and Development: "Association pour la Formation Professionelle des Adultes ( AFPA)".

In 2006 he obtained his Masters' Degree in Hospitality & Tourism Management (Université de Perpignan) and moved to Thailand to offer lectures, training and consulting services to hospitality businesses, educational institutions or NGOs, such as Six Senses & Spa, Nestlé Food, Maekong Cruises, Silpakorn University, Maidol University, the European Institute of Cooperation and Development of the United Nations.

In March 2013, Christophe Mercier joined Le Cordon Bleu Dusit to offer the Wine Studies Course which was just opened for students and alumni of LCBD on 26 April 2013.


This course will help you appreciate the beauty and importance of wine. You will also learn how to combine food with the best wines and you will also explore wines from around the world – including the best Thai wines.


It is a 45-hour program where each term we offer either a weekday or Saturday class. The course combines academic and practical knowledge with plenty of wine tasting sessions and excursions to wineries and vineyards in Thailand.

The course will run alongside the Classic Cycle classes over the normal 10 week term and will be offered in January / April / July and October Terms of every year. The course is designed for all our culinary students who want to learn all about wine to compliment their cuisine or patisserie or bakery studies, or anyone who may be interested to learn more about wine.
