Guest Demonstration with Andrej Urosevic


Le Cordon Bleu London were recently joined by Chef Andrej Urosevic, a Le Cordon Bleu Paris alumnus and specialist in working with fish.


Andrej is an angler, Certified Fish Sommelier and Advanced Fishmonger, and following gaining experience in several Michelin-starred fish and seafood restaurants he now creates fish and seafood tutorial videos full time for his social media.

At the demonstration, Andrej showed different ways to work with sea bass and lemon sole. He showed how to fillet the fish and different ways to prepare them, including sea bass carpaccio, sea bass ‘Surf & Surf’ with scallops, and lemon sole à la marinière en papillote.
