In ingredient research program you will be able to learn more how to work with the theme ingredient and know the latest information. A practical course that is useful for recipe improvement and new product development. This time you will be learning the potential and be fascinated by the theme ingredient "An", one of the basic traditional ingredient of Wagashi.

Demonstration of cooking the Azuki Beans and shaping Ohagi for tasting.

Hikoyuki Yamaguchi, one of the youngest leaders in the world of wagashi, is fifth-generation owner of Kuya in Ginza, founded in 1884. Established own French-inspired spin-off product line, "Sora-iro", as an extension of the Kuya brand.

This class is taught in lecture style ※not practical lesson
