Rolling a genoise sponge for making a Yule log

A Christmas Yule log is not so difficult to make, here are a few tips to learn to roll a genoise sponge for making the perfect yule log.

              1. Once the genoise sponge is cooked, leave to cool. Remove from the mould and use a knife to heaten up the sides.

              2. Transfer the genoise sponge onto a slightly damp clean tea towel and spread the filling on the genoise sponge.

              3.  Use the tea towel to roll the Yule log.
