OffTheMenu program

On May 27th, the student and alumni community of Le Cordon Bleu Madrid attended a unique and different masterclass. Departing from the usual OffTheMenu format, this session focused on the art of the table and the essence of hospitality, courtesy of ACME. Since its founding, ACME has passionately shared its expertise in tableware with decorators, chefs, and restaurants around the world.

As they explained during the session, ACME has spent over thirty years working with some of the most prestigious brands in the world of tableware, including Ercuis & Raynaud, Coquet, Robbe & Berking, Hering Berlin, Dibbern, Nason & Moretti, Stockman, Sambonet, Vista Alegre, Costa Nova, Cutipol, among many others. They combine experience and talent to create unique table settings, sourcing the finest products and materials to ensure their clients' tables reflect the overall concept, decor, and personality of each restaurant.

Attendees enjoyed a pioneering presentation led by ACME founders Carlos and Silvia Pardo, who guided participants through various materials, highlighting their properties and differences. They introduced leading contemporary tableware brands and manufacturers, explained industry standards based on the type of dining room, and emphasized the importance of proper training in tableware care.

A unique masterclass within the complementary training activities of the institute, which surprised the attendees and opened a range of possibilities when undertaking a new project in the world of hospitality and catering.
