Let's start with a French classic, the famous quiche Lorraine! Did you know that the word quiche comes from the German - kuchen (cake) and, Lorraine, is the name of the region where it was invented, in northern France.

Below, the recipe of Chef Yann Kamps from Le Cordon Bleu Rio de Janeiro:




Ingredients

    Pâte brisée:
    • 250g wheat flour
    • 125g butter
    • 5g salt
    • 60g egg
    • 30ml water
    Garnish:
    • 300g bacon cut in Lardons
    • 80g grated Gruyère cheese.
    Filling:
    • 3 eggs
    • 250g Fresh cream
    • Salt, pepper and nutmeg to taste

    Method

    Pâte brisée: Add all the ingredients and mix by hand. Then roll the dough, and bake at 180 ° C for 25 min.

    Filling: Mix all ingredients

    Garnish: Sauté the lardons and grate the gruyère cheese.

    Place the garnish and filling in the Pâte brisée, and bake at 180 ° C for 20-25 minutes.

    Tip: as a side, a mix of green leaves with Dijon mustard
