On the 27th of July, the Taiwan Business Association of New Zealand hosted its annual Oceania International Culinary Arts Challenge. A cultural exchange that celebrates New Zealand ingredients and traditional Taiwanese cuisine. Our student Chia-Chieh Lin (known as LJ on campus) currently studying the Diplôme Avancé Culinaire in Cuisine, submitted the winning entry to the competitions ‘Exotic Cuisine’ category.
LJ submitted two dishes, Peeled Green Pepper Pâté en Croute, and Fresh Fish & Scallops with Spicy Bean Pasta and Saffron Beurre Blanc Sauce. Elegant presentation, bold flavour, and well-balanced texture earned LJ the gold medal.
LJ has been a prominent voice within campus, proudly sharing his Taiwanese culture, thanks to LJ our campus now has a close relationship with the Embassy of Taiwan in New Zealand. We host the embassy’s Taiwanese Beer Events and celebrations, and with enthusiastic persuasion from LJ, guests can now find traditional Taiwanese beer in our Brasserie Training Restaurants beverage menu.
It is no small accomplishment to prepare for and win a culinary competition while studying, we are incredibly proud of LJ and his dedication to the Culinary Arts. LJ is now hard at work finalising a 7-course degustation menu alongside his peers as a part of his studies, with tickets already sold out, our guests can look forward to an exceptional experience that reflects the hard work and talent on display.
