Latin America and the Carribean Week

Le Cordon Bleu Paris was delighted to welcome chef Alejandro Gutiérrez for a cuisine demonstration, in partnership with the Colombian Embassy, as part of Latin America and the Caribbean Week, which is taking place throughout France from 26 May to 11 June 2022.

Organised by the French Ministry for Europe and Foreign Affairs, Latin America and the Caribbean Week provides the perfect opportunity to celebrate the friendship that links the two continents and to discover just how much Colombian gastronomy has to offer.

Chef of Salvo Patria restaurant in Bogota, Alejandro Gutiérrez is driven by his desire to introduce others to Colombia’s vast culinary diversity, working with sustainable ingredients from producers and small farmers to create a menu using seasonal ingredients. What sets him apart, is his constant pursuit of native ingredients and historical Colombian recipes in his quest to celebrate and safeguard his culinary culture, whilst telling a story through the dishes he makes.
 
On the menu at the culinary demonstration:
-    A traditional recipe from the Oitoto ethnic community in the Colombian Amazon: Zaibiki – fish-based  
-    A traditional recipe of several indigenous communities in Brazil, Colombia, and Peru: Patarashca – fish-based
-    Dessert: Chocolate, Mambé and Lulo

Chef Alejandro Gutiérrez elevated the ingredients of his home country, Colombia, producing vibrant and delicious cuisine.
