The cheesiest way to kick off school holidays

With school holidays on the horizon, elevate your at-home lunches with a comforting classic. This indulgent three-cheese toastie, crafted by Le Cordon Bleu Melbourne Chef Lecturer Paul Maurici, is sure to become a family favourite.

Three-Cheese Toastie

Ingredients

  • 30g Parmesan, finely grated
  • 30g Gruyere, finely grated
  • 30g Mozzarella, shredded
  •  2 tbsp butter
  • 2 slices thick cut sourdough bread

Method

  1. Butter each slice of bread, top and bottom.
  2. Layer the cheese mixture on one side of the bread and top with other slice of bread.
  3. Toast the sandwich in a pre-heated, flat sandwich press or non-stick frying pan on a moderate heat for approx. 3-5 mins (note if using a fry pan you will need to flip the toastie and apply a little pressure to achieve a nice golden crust).
  4. Cook until deep golden-brown in colour and the cheese melts.
  5. Enjoy!
