Our New Custom Made Oven For Boulangerie Is Here In Ottawa
With the Fall 2020 term starting, our boulangerie students will be using a custom-made Bongard oven, one of a kind special equipment, to make delicious bakery products
The fundamentals of Boulangerie are covered in the specialized 3-month certificate offered in Le Cordon Bleu Ottawa, designed specifically for those wishing to pursue excellence in the craft of Boulangerie. Hurry, there are a few spots left for October 2020 intake.
The Boulangerie de Base program teaches:
- Bakery theory, food hygiene and safety
- Yeast doughs, fermentation and preparations
- Breakfast and specialty breads using laminated and rich doughs
- Artisan breads
For the aficionados who want to learn about Boulangerie but can only commit to non-vocational short courses, we will also be offering various short courses from October to December 2020 including a 20-hour bread making course and 4-hour workshops on introduction to bread making, sourdough bread and viennoiseries.
