Europain Lab: a boulangerie concept created by Le Cordon Bleu Paris students

Le Cordon Bleu Paris took part in the largest French exhibition dedicated to boulangerie and pastry professions, Europain, from 11 to 14 January 2020 in Paris. As a partner of the exhibition, the Institute was chosen to create a new boulangerie of the future concept with its students: Europain Lab. This modern space, measuring 280m², was set up by Sylvie Amar & Partners, in partnership with Moulins Viron.

The pop-up boulangerie, which also offered a range of snacks, was the result of an educational project on which the students of the Institute were given the opportunity to work. For over 10 months, they developed their concept of the boulangerie of the future with a Chef Instructor. Production, sales and service were provided by professional immersion students as part of practical application, with the support and assistance of student volunteers.
