International Day of Happiness was celebrated across the globe on March 20. In the spirit of all things warm and fuzzy, we’ve found the perfect recipe you can make after a hard day’s work (or study). This Chocolate Jaffa Mug Cake is the key to a little bit of happiness – you can thank us later!

Makes: 4 mugs (cups)
Prep and cooking time: 10 minutes  

Ingredients
100g dark chocolate (54%)
100g unsalted butter
Zest of 1 orange
1 dessert spoon Cointreau
2 eggs
2 egg yolks
60g caster sugar
60g plain flour

Garnish
4 dessert spoons Nutella
Vanilla ice cream

Method
In a microwave-proof bowl combine the chocolate and butter together and heat in the microwave for 1 minute until the butter and chocolate has melted and then mix well together.

In a separate bowl combine the eggs, egg yolks, sugar and orange zest and whisk well together until pale and frothy. Mix the egg mixture with the chocolate mixture until well combined, add the Cointreau and the plain flour and mix well until all the flour has combined and is a smooth batter.

Lightly grease 4 mugs or teacups with butter then fill each cup ¾ full of the chocolate mixture and cook each one separately in the microwave for 2 to 3 minutes checking after each minute to see if the mixture is cooked – the mixture should be firm to the touch once cooked and will have a soft centre.

Remove from the microwave and dust with icing sugar. Serve with a generous spoonful of Nutella and vanilla ice cream on top.
