Le Cordon Bleu Adelaide’s Justin Williams has a handy tip on using the half-speed function to gently fold fruit into a cake batter.

“Traditional machines only have a speed from one to 10, but this machine has a really cool feature which is a half-speed function,” Chef Justin says.

“It is designed to fold ingredients into your mixture without needing to spoon them into the bowl, and if making desserts with fruit, it will allow you to add them gently without the fruits being squashed or mashed.”

In the video (watch here), Chef Justin demonstrates how adding flour into an already creamed sugar-butter mixture is effortless, without the flour spurting up the sides and creating mess.

He then uses the same half-speed function to incorporate the fruit into the cake batter. With the use of half-speed, the fruit is perfectly mixed in and kept intact.
