Chaine Amical Dîner Presented by Sunway Le Cordon Bleu
LE CORDON BLEU MALAYSIA
Sunway Le Cordon Bleu have been tasked to present an Amical Dîner for the Bailliage De Perak of the La Chaine Des Rotisseurs Malaysia. Our team of culinary experts crafted a traditional French Menu where a different type of Bread is paired with each course. One of the members who is a wine maker and owns a Vineyard in Bourdeux paired the dishes that evening with their wines.
The French Ambassador to Malaysia, His Excellency Axel Cruau, who is also is an Honorary member of the La Chaine Des Rotisseurs, graced the occasion that evening. HE and the Bailli Delegue of Malaysia Prof. Dato Elizabeth Lee took to the task that evening by giving a cooking demonstration headed by Technical Director, Chef Stéphane Frelon much to the delight of those present.
Accompanied by sweet music from the harp, the master chefs of Le Cordon Bleu curated a 4-course meal which includes the Cuisse de Grenouille Persillade, Fondue de Tomate au Basilic (Panfried Frog Legs with Garlic, Parsley, Basil Tomato Fondue), a fish course of Médaillon de lotte, Poireaux et Carotte, Beurre Nantais (Steamed Monksh Medallion, Carrot Purée, Leeks in Filo Pastry & Beurre Blanc Sauce) and the beef course of Boeuf Bourguignon, Petits onions, Champignons et Lardon de Canard fumé, Pomme Purée Légère (Beef Burgundy, Pearl Onions, Mushrooms and Smoked Duck Bacon & Potato Purée) with an exceptional twist to its plating.
The evening ended with a delicate dessert--Mille Feuille L’Orange et Cointreau (Cointreau Mille Feuille) which is fine and exquisite. All guests went home that evening with premium gifts from Le Cordon Bleu and a box of Macarons.
Certificates of recognition were also presented to the kitchen and service brigade that evening. It was a delectable meal which was skilfully prepared and had demonstrated the expertise of the chefs. Overall the dishes brought much pleasure to the palate and was indeed a great food sensory experience for all.
