Le Cordon Bleu Ottawa's Chef-Instructor Serge Martin shares his "My Little Cloud" dessert recipe on the April-May 2020 edition of Le Journal Du Patissier, one of the most influencial pastry magazines in the world.

I wanted to create a different version of a Saint-Honoré with something a little lighter. I find the combination of tropical and vanilla & the cloud mould for the shape works perfect with the theme.
