
We are pleased to announce the return of Chef Nicolas Jordan, M.O.F., to Le Cordon Bleu Ottawa campus as Technical Director. In addition to supporting strategic initiatives aimed at enhancing campus growth, he will share his renowned pastry expertise with students and inspire the next generation of culinary professionals.
Chef Nicolas Jordan's exceptional craftsmanship and artistic vision have earned him international recognition throughout his career. In 2015, he was awarded the prestigious title of Meilleurs Ouvriers de France M.O.F - ‘One of the Best Craftsmen in France, Ice and Ice Cream’, one of France's highest professional distinctions.
Throughout his career, Chef Nicolas has taken ice carving and sugar techniques to new heights, earning numerous accolades, including Bronze Medal Ice Carving at Winterlude Ottawa (2010), Winner of the Ice Sculpture France Championship (2010), Winner of the Ice Desserts Open at the Sirha (2011), and selection to France's World Pastry Cup Team (2013).
Born in Vannes, France, he earned his professional CAP certificate in pâtisserie under the apprenticeship of Chef Alain Chartier, M.O.F. He then went to work at the esteemed two-Michelin-starred Laurent restaurant in Paris, before heading off to Canada to work alongside Chef Christian Faure, M.O.F. In 2008, Chef Nicolas joined the team of pastry Chef Instructors at Le Cordon Bleu Ottawa and later taught at Le Cordon Bleu Paris and the École Nationale Supérieure de la Pâtisserie in France, where he led advanced pastry programs and trained aspiring professionals from around the world.
As he returns to Le Cordon Bleu Ottawa as Technical Director, he brings a unique blend of technical mastery, entrepreneurial expertise, and a passion for culinary education. Alongside supporting the development of new initiatives for the campus, he will continue to share his knowledge and expertise with students through selected pastry courses.
From award-winning ice sculptures and world-class pastry creations to inspiring the next generation of culinary professionals, Chef Nicolas has built a career defined by creativity, excellence, and innovation. Le Cordon Bleu Ottawa is proud to welcome him back as he begins this exciting new chapter with the Institute.
