On October 5, Chef Nicolas Jordan, M.O.F., joined CTV Morning Live for a special live demonstration showcasing the craftsmanship and precision behind chocolate making, from the cacao bean to the finished chocolate bar. The techniques showcased on CTV Morning Live offer just a small taste of what participants can expect from Chef Nicolas Jordan's upcoming Premium Masterclass Series at Le Cordon Bleu Ottawa.
During the segment, Chef Nicolas explained each stage of the “bean to bar” process, beginning with roasting the cacao beans, followed by peeling and grinding the cacao nibs and how the cacao is transformed into chocolate, incorporating cacao butter and sugar before refining and tempering the chocolate to achieve the smooth and glossy finish. The demonstration culminated in an elegant chocolate tablet, offering viewers a glimpse into the expertise and artistry that define Chef Nicolas's work.
Chef Nicolas also talked about his return to Le Cordon Bleu Ottawa. Following a distinguished career that has included entrepreneurial ventures and extensive experience in the world of pastry and chocolate, Chef Nicolas is returning as Technical Director to the institution where he previously taught in 2008. . His return also marks the launch of an exciting new Premium Masterclass Series, where he will share his expertise and advanced techniques with culinary professionals. The series will focus on refined chocolate and pastry techniques, advanced craftsmanship, and professional applications.
