Le Cordon Bleu London will host its first ever Summer Festival on Saturday 29th June. The festival will include interactive practical workshops, demonstrations from Le Cordon Bleu Master Chefs, guest chefs from high-end restaurants and successful alumni, as well as an all day market by Slow Food Market.
We are joined by three incredible former Le Cordon Bleu Students: Olivia Burt of Claridge's, Sarju Ranvaya of TheTasteLab and Joo Won, Head Chef at Michelin-starred Galvin at Windows.
Claridge's Sous Chef Olivia Burt will be providing a hands-on workshop preparing a dish of beef tartar with pickled shallots and egg yolk puree for garnish.
TheTasteLab's Sarju Ranvaya will be leading a pastry class where you will create Earl Grey Truffles, displaying the skill which saw him win best artistic showpiece at the UK Pastry Open, before representing the UK at the Coup Du Monte de la Patisserie 2019.
Originally from South Korea, Joo Won has been Head Chef at Michelin-starred Galvin at Windows since 2013. In this practical workshop, he will lead attendees through an Iberico pork boulgogi with fresh kimchi and pickled mooli.
