Festive poultry closes its annual FueraDeCarta programme with a masterclass by Higinio Gómez.

On May 12, the students and alumni of Le Cordon Bleu Madrid attended a masterclass on Colombian signature cuisine led by chef Edwin Rodríguez, from Quimbaya, awarded 1 Michelin Star in 2022 and 1 Repsol Sun in the same year. Edwin Rodríguez, a Bogotá-born chef, pioneer, creative force, and soul behind Quimbaya, is also a Colombia Country Brand Ambassador.
The cuisine at Quimbaya is a journey through the Caribbean, the Pacific, the Andes, the Orinoquía, and the Amazon — diverse regions of Colombia brought together through the stories that inspire the chef in the creation of his dishes.
During the masterclass, the chef presented a demonstration focused on the use of exotic fruits, exploring their applications and properties in dishes prepared using different techniques. He showed us how to create avant-garde dishes inspired by traditional Colombian recipes, where exotic fruits make all the difference. Attendees discovered new ways of working with ingredients through creations such as “Mussels, chontaduro and coconut” and “Golden berries, trout and patacón.”
This inspiring masterclass continues the 2026 edition of “FueraDeCarta,” a series in which the chef, through Quimbaya, takes diners on a journey through the flavors of Colombia, showcasing traditional cuisine through a contemporary lens.
