Le Cordon Bleu Online Pathway

Le Cordon Bleu is using an advanced, digital education platform to give students the opportunity to study a suite of online hospitality management subjects. The online program consists of eight non-award subjects that can be used as a pathway to Le Cordon Bleu’s Bachelor of Business degrees. The content of the eight subjects is identical to that being delivered to on campus students, with all subjects taught from Australia, by Australian academic staff. Successful completion of this first semester will count as a full credit for the on campus Bachelor of Business program.

Year 1

Stage 1: Online (6 months)

The Online Pathway will provide students with the basis for fundamental management skills essential to any career in the hospitality industry. Over the course of the 6 month program, students will be introduced to subjects including finance, marketing, human resources, communication and management. The theories and concepts covered in these subjects are aimed at equipping students with core operations and management principles that are commonplace in business today.

All Online Pathway students will be provided access to Le Cordon Bleu's digital education platform where subjects will be presented to students in an easy-to-follow, interactive sequence. At each stage of learning, students will be provided with opportunities to access various forms of resources, which cater for a wide range of learning styles. Students will also be able to participate in activities to put theories and concepts into practice, and utilise state-of-the-art online tools in a rich learning environment. Students will be able to study from home, while still having access to the teaching staff and resources of Le Cordon Bleu, receiving both technical and academic support to facilitate their online learning.

Stage 2: On Campus in Australia (6 months)

In line with Le Cordon Bleu's educational philosophy of providing students with practical experiences to complement their theoretical studies, Stage 2 includes a range of highly practical subjects where students will develop skills in areas including professional cookery, food and beverage service and wine tasting.

Year 2

Stage 3 & 4: Professional Experience (12 months)

Professional Experience provides students with the opportunity to apply and evaluate acquired knowledge and skills in the hotel and restaurant industries. Students apply theoretical and practical academic skills from the course, such as observation, information gathering and data collection, building incrementally to the point where the amassed data can be utilised as a research tool. Research collaboration among students has been further enhanced by online technologies.

Year 3

Stage 5: On Campus in Australia (12 months)

Explore the exciting world of hotel or restaurant management and development. Examine contemporary approaches to organisational leadership and strategic management. Consider essential business demands such as risk management planning, advanced marketing strategies and hospitality business law. Quality service management that focuses on delivering superior performance and value to customers is a vital ingredient to your success while you exercise your creative skills in entrepreneurship.

Coming soon! Le Cordon Bleu Online Pathway offers two starting dates in January and July each year.


The Online Pathway, consisting of eight subjects, is 6 months in duration. For continuing students, the remaining subjects for the Bachelor of Business degrees are completed with 18 months academic study and 12 months industry placement.

Entry requirements

Satisfactory completion of Year 12 or equivalent interstate/overseas secondary education is required. Applicants must be 18 years of age when the course commences.

English Language Requirements

Overseas students must have a minimum level of English proficiency to IELTS (International English Language Testing System) 6 with no Band Score below 5.5. If English language proficiency is found to be insufficient for successful completion of the academic program, Le Cordon Bleu can direct you to undertake additional language training.


The Online Pathway may be undertaken from your location. Under delivery agreements with partner institutions continuing students may choose between Adelaide and Sydney for on campus study at Ryde College of the TAFE NSW Northern Sydney Institute External Website.

Course Credit

You can apply for course credit, a process that recognises prior study, skills and knowledge. Graduates from recognised institutions providing evidence of their previous studies and industry experience can apply for course credit, also known as Advanced Standing, RPL, Academic Credit or Credit Transfer.

Bridging Course

All direct entry Stage 3 students entering the Bachelor of Business degrees must undertake the Le Cordon Bleu Bridging Course, a one-week program offered immediately before the commencement of each semester.

Professional Experience

Workplace experience is a crucial component of the Le Cordon Bleu Bachelor degrees. To complement the theoretical study components, each student is required to undertake Professional Experience over twelve months in Stages 3 & 4 of the program.

Placements are negotiated by the Le Cordon Bleu Professional Industry Placement Department whose staff aim to match students and placements to obtain the most advantageous outcomes for each.

Placements in Australia are usually paid and students will enter into a contract of employment with the host employer for the period of the placement. Students may also opt to undertake placements in various overseas locations.

Assessment Methods

Assessment methods vary and include a combination of examinations, tests, essays, reflective journals, reports, projects, and other written assignments, oral presentations, classroom discussions and activities.

Teaching Methods

The Online Pathway will be delivered via Le Cordon Bleu's digital education platform. Students will learn using a variety of methods, including interactive online courses, web-based tutorials and activities, as well as traditional forms of assessment. On campus education is delivered through a combination of lectures and tutorials, integrating Le Cordon Bleu's innovative digital resources, with selected subjects from the Le Cordon Bleu Bachelor of Business degrees delivered at the Ryde College of the TAFE NSW Northern Sydney Institute (NSI). Practical courses use the specialist restaurant, kitchen and beverage service facilities available at Ryde College of the TAFE NSW Northern Sydney Institute (NSI). In addition to scheduled classes, students are expected to undertake individual study and extensive reading to further develop their knowledge.
