
Naoyuki Haginoya from Grupo Nomo visits Le Cordon Bleu Madrid within the #OfftheMenu program
On May 7th, students and alumni of Le Cordon Bleu Madrid enjoyed a masterclass of the Off the Menu program led by Naoyuki Haginoya from Grupo Nomo.
The Institute continues with its annual program of masterclasses. We received Noelia Tomoshige (Monroebakes), Le Cordon Bleu Madrid alumni, and Revelation Pastry Chef at Madrid Fusión 2023 at the beginning of June.
Noelia, who graduated at the end of 2020, founded Monroebakes, a workshop where she shares her Japanese and French pastry creations.
The students and alumni of Le Cordon Bleu Madrid enjoyed a masterclass where Noelia introduced Japanese pastry, discussed its different branches, and demonstrated the preparation of three recipes available for purchase at Monroebakes: traditional dorayaki, matcha and raspberry roll cake, and her award-winning dessert, Furusato, from the Madrid Fusión 2023 Revelation Pastry Chef competition.
Additionally, Tesuko Tea Hunters presented the history of matcha green tea and conducted a tasting of various teas (including ceremonial matcha, matcha latte, and culinary matcha) among others.
