Connecting Through Food, Canadian Seafood Meets Culinary Innovation

Sunway Le Cordon Bleu was honoured to host the Canadian Seafood Promotion Event at the newly established Le Cordon Bleu Sunway Culinary Innovation Center, in collaboration with the High Commission of Canada and the Indo-Pacific Agriculture and Agri-Food Office (IPAAO).

The event brought together Canadian seafood representatives, Malaysian industry professionals and business stakeholders for a day of networking, knowledge exchange and culinary discovery, with the aim of promoting Canadian seafood and increasing awareness of its quality, diversity and versatility.

Among the distinguished guests in attendance were Jason Hollet, Deputy Minister of the Nova Scotia Department of Fisheries and Aquaculture; Eric Pelletier, Chargé d´Affaires of the High Commission of Canada; and Diedrah Kelly, Executive Director of the Indo-Pacific Agriculture and Agri-Food Office (IPAAO) ; and Prof. Dato’ Elizabeth Lee, VIP guest representing Sunway Education Group and also the Director of Sunway Le Cordon Bleu. The event commenced with a Business-to-Business (B2B) meeting, with Sunway Le Cordon Bleu serving as the venue host and providing a professional platform for delegates and industry representatives to network, exchange insights and explore potential business opportunities related to Canadian seafood.

The Culinary Innovation Center provided an ideal setting for the event, bringing together industry engagement, culinary education and professional food experiences under one roof.

Adding a culinary dimension to the programme, Chef Stéphane Frelon, Technical Director of Sunway Le Cordon Bleu, conducted a live culinary demonstration at Restaurant 1895, showcasing the versatility of Canadian seafood through professional culinary techniques.

For the demonstration, Chef Stéphane prepared Black Cod Aioli with Banana Flower, combining premium Canadian seafood with a locally inspired ingredient. Through his demonstration, guests gained an insight into the preparation techniques and culinary possibilities of Canadian seafood in a professional kitchen.

The showcase demonstrated how high-quality Canadian seafood can be incorporated into contemporary cuisine while allowing chefs to explore different flavours, textures and culinary approaches.

While the culinary demonstration took place at Restaurant 1895, Sunway Le Cordon Bleu students were busy preparing the dishes at the Incubator Studio, working alongside Chef Stéphane and the culinary team.

The students prepared and assisted in serving an extensive selection of Canadian seafood creations for the special lunch, showcasing a variety of culinary techniques and flavour profiles.

Following the culinary demonstration and preparations, delegates and distinguished guests were invited to enjoy a special lunch at the Indigo VIP Room.

The intimate dining setting provided an opportunity for guests to experience the featured Canadian seafood dishes while continuing conversations and connections established throughout the B2B meeting.

Working behind the scenes at the Incubator Studio, students gained firsthand experience in preparing and executing a professional industry event, from mise en place and food preparation to presentation and service.

The opportunity allowed students to work alongside experienced culinary professionals while developing their teamwork, organisation and service skills in a real-world event environment.

Hosting the Canadian Seafood Promotion Event at the Le Cordon Bleu Sunway Culinary Innovation Center also highlighted the purpose of this newly established space, to bring together learning, innovation, industry and dining.

The Innovation Center was purpose-built to support the newly launched Diploma in Culinary Entrepreneurship, providing students with a platform to develop their culinary concepts, receive expert mentorship and explore how food ideas can be transformed into viable, real-world businesses.

With spaces such as the Incubator Studio, Restaurant 1895 and Indigo VIP Room, the Culinary Innovation Center provides an environment where students can learn through practical experiences while engaging with industry professionals and real-world culinary projects.
