From Le Cordon Bleu Australia to Asia’s best pastry chef: Ardika Dwitama’s recipe for success

For Ardika Dwitama, a passion for hospitality developed from an early age. Growing up in Indonesia, he saw the industry through his father, a food and beverage professional and businessman whose work often revolved around discovering new restaurants. Those early experiences sparked a curiosity with hospitality that has shaped an extraordinary international career.

Today, Ardika is recognised as one of Asia's leading culinary talents, most recently earning the prestigious title of Asia's Best Pastry Chef 2026 from Asia's 50 Best Restaurants. Yet despite the individual recognition, Ardika remains focused on the collective effort behind his success.

"This award means a lot to me personally and professionally, but I see it as something much bigger than an individual achievement," he says. "It belongs to the team who dedicate themselves to the work every single day."

Choosing Le Cordon Bleu to pursue excellence

When it came time to pursuing his culinary education, Ardika was looking for more than just technical training. He wanted an internationally recognised institution that would challenge him personally and professionally, while exposing him to new perspectives and opportunities. That search led him to persuing an Advanced Diploma of Hospitality (Cuisine) with Le Cordon Bleu Australia.


At the time, it was a combination of Le Cordon Bleu's reputation and the opportunity to study far from my home country, I wanted to challenge myself by stepping outside of my comfort zone, experiencing a different environment and learning from an institution with such a strong reputation in culinary education.

It was a decision that would help shape the trajectory of Ardika’s career. Beyond refining his culinary skills, Ardika's experience at Le Cordon Bleu instilled the discipline, professionalism and mastery of fundamentals that continue to guide him as an internationally recognised chef today. The skills and mindset he developed as a student have become the foundation upon which he has built a career defined by continual growth, excellence, and innovation.

Building a foundation that lasts a lifetime

In an industry often defined by innovation and creativity, Ardika believes enduring success comes from mastering the basics. Reflecting on the lessons that have stayed with him throughout his career, he points to the values instilled during his studies.

"The discipline, the routine and the fundamentals of cookery," he says. "Those basics stay with you. No matter how much you progress, I believe you always come back to them."

Unlike many professionals who can point to a defining moment when a passion became a career, Ardika's path unfolded naturally.

"I've always loved people and I've always loved this industry, so for me, choosing a career in hospitality felt quite natural," he says. "When it comes to skills, I've always believed they develop over time through experience, repetition and the will to keep learning."

Having witnessed the hospitality industry evolve over the years, Ardika believes one of the most important developments has been the growing emphasis on supporting the wellbeing of hospitality professionals.

While the core principles of hospitality remain unchanged, he hopes to see the industry continue prioritising environments that support people physically, mentally, and emotionally.
