Cuisine and conquer: Matilda's rise through the competition ranks

For many aspiring chefs, success is measured by years spent building experience in professional kitchens. For Advanced Diploma of Hospitality Management (Commercial Cookery) student Matilda Birkholz, success has come remarkably early in her culinary journey.

During her studies with Le Cordon Bleu, Matilda has already achieved significant recognition, being named the 2025 South Australian Regional Winner in the Golden Chef Awards and the 2026 South Australian Cookery Winner at WorldSkills Australia. These achievements have not only showcased her talent and dedication but have also reinforced the value of embracing every opportunity that comes with a Le Cordon Bleu education.


Competing for me was never really about winning, but about creating dishes I can be proud of, showcasing my skills and techniques, and pushing myself to see what I am capable of.

Representing both South Australia and Le Cordon Bleu Australia on the competition stage has been a source of immense pride for Matilda, particularly as she looks ahead to the upcoming National WorldSkills Competition 2027, which will be hosted in South Australia.

While competition day is often where achievements are celebrated, Matilda believes the real work happens long before the judges ever taste a dish.

Preparation for both competitions involved months of brainstorming, testing recipes, refining techniques and completing timed practice sessions. After developing initial concepts in her home kitchen, Matilda was able to utilise Le Cordon Bleu's training facilities to refine her dishes and receive valuable feedback from her chefs and lecturers.

As a student at Le Cordon Bleu Adelaide, Matilda has been able to develop her skills while studying in a city celebrated for its culinary culture and strong industry connections. Through practical training, industry engagement and mentorship from experienced chefs, students are immersed in an environment that reflects the innovation, creativity and high standards for which South Australia's hospitality industry is renowned.

Among those who have made the greatest impact is Chef Simon Taylor, who has worked closely with Matilda since the beginning of her Le Cordon Bleu journey.

From introducing her to culinary competitions to supporting her preparation and skill development, Chef Simon has played a pivotal role in helping Matilda achieve her goals. The experience has also inspired Matilda to one day mentor future young chefs herself, recognising the significant impact that guidance and encouragement can have on someone's career.
