Following the Ōra King Salmon demonstration led by chef Shaun Clouston last month, a selection of our Bachelor of Culinary Arts and Business students were tasked with creating an entrée that highlights Ōra King Salmon. Students worked in pairs and were given two hours to create their dish.

Our students prepared stunning and flavourful creations that truly impressed our judges, the variety of techniques and flavour combinations gave each entry a strong identity. The dishes that came out on top were ones that emphasised the freshness of Ōra King Salmon and took consideration of the dishes requirements as an entrée. Our judges were chef instructor Evan Michelson and Ōra King Ambassador Chef Shaun Clouston, returning to see how his demonstration had inspired our students.

Our first-place team won a degustation dinner at Logan Brown. Co-owned by guest judge Shaun Clouston and celebrating 30 years of operation in Wellington, Logan Brown is one of the country’s top restaurants and has helped propel the careers of many of our graduates. Logan Brown has just been awarded one of the country’s first MICHELIN Stars. Shaun provided valuable feedback and took time to congratulate students and offer advice to further refine submissions. Our second and third place won a selection of merchandise from Ōra King and all students left with a pair of fish bone tweezers. The greatest reward for our students was the opportunity to work with world-class ingredients and learning from one of New Zealand’s top chefs.
