Objectives

  • To know, master, and apply current culinary techniques worldwide.
  • To correctly execute the repertoire of Peruvian and international cuisine and pastry.
  • To know, master, and operate all utensils and equipment used in cooking and pastry making.
  • To plan, organize, and manage the operation of the entire food service area, such as the production department, in restaurants, hotels, and similar establishments.
  • To manage budgets to determine the cost of raw materials and their impact on the price of finished products.
