Using the best Brazilian products, you will tour regions of our country, discovering new ingredients with flavor combinations. A course designed for lovers of Brazilian food, Le Cordon Bleu's Brazilian Cuisine Fundamentals classes will allow you to explore specialties of our country under the guidance of one of our chefs who will teach you how to balance flavors while learning basic techniques and recipes. This course will have 5 sequential days with deonstration ans practical classes.

Course Information

Duration: 6 hours per day
Teaching Method: 50% Demonstration and 50% practical.

Dates: September 26 to 30, 2022 – from 8:00 am to 2:30 pm
Dates: December 12 to 16 , 2022 – from 15h30 to 22h00

Recipes:
  • Country rice.
  • Shrimp with cassava aligot with cut cheese and cilantro pesto.
  • Mangaba crème brûlée with baru nut
  • Brazilian feijoada.
  • chicken with pequi
  • Mignon de sol with milk mush, sautéed bredo, Brazilian chestnut farofa (with bacon) and brown sugar glaze.
  • Pantanal fish mojica with citric farofa of pout pepper.
  • Duck with tucupi with garlic vine
  • Paupiette of fish (snake or tilapia) on banana leaf with herb butter with Brazilian vegetables and peixinho tempura.
  • Dry pantanal fish soufflé with bredo and Amazonian pepper.
  • Tambaqui with Amazonian couscous and tucupi bearnaise.
  • Sun meat tartar with cilantro mayonnaise.
